FRESHLY HARVESTED INGREDIENTS AND IN-HOUSE PRODUCTION: OUR ORGANIC KIMCHI

We attach great importance to short transportation routes and immediate local processing. Like almost all of our products, our Organic Kimchi is carefully prepared in-house. We are involved with every step of the process, starting with the harvest and ending with the finished Bio-Lutz jar.

 
 
 

We cultivate quite ordinary fruits and vegetables – which thrive extraordinarily on our soil. A sophisticated cultivation cycle allows us to keep our soil in balance, ecologically speaking.

 

Take fresh and organic quality celeriac, carrots, leek and Chinese cabbage, grown in the surrounding fields

 
 
 
 

In our manufactory, the vegetables are carefully washed, cut and salted by hand.

For the typically spicy kimchi flavor, chili, garlic, ginger and soy sauce are a must.

 
 
 
 

The latter are, together with rice flour paste, stirred into an intensely spicy marinade and then blended with the prepared vegetables – without using any additives. Subsequently, the mixture is packed into an airtight container and kept at a constant temperature for up to 4 weeks. This is when the fermentation process starts, preserving valuable vitamins, mineral nutrients and probiotics – and creating the distinctive kimchi aroma.

 
 
 
 
 

Subsequently, the kimchi is packed by hand into recycled jars. Finally, the jars are labeled and sealed.
